This Sauvignon Blanc is a special limited release, made from vines planted in 1987. The fruit is harvested based on flavour and retention of natural acidity. This means harvesting at moderate ripeness which also assists with capturing fruit freshness. The wine is barrel fermented in French barrels then aged in barrels for ten months.
We release our wines after they have had time to develop in the bottle, a French approach for releasing wines when they are ‘ready’.
‘Bright straw-green; a remarkable sauvignon blanc, with a laser-like purity and precision to its bouquet and palate, poised in the dead centre between savoury and fruity, taking the best from each, and at no stage giving airplay to Marlborough, instead looking to the best of the Loire Valley.
