Surf & turf with Sparkling Chardonnay 2005
Shared by an UMAMU connoisseur, we are thrilled to see. This Sparky is also being well enjoyed via Wine Selectors and their keen bs’… was poured at our Hong Kong 15th Anniversary dinner and recently, served as aperitif at the launch of Duck In Duck Out creation by Manu Feildel & Phillip Davenport. Hot press we just found out, is also featured with 4 stars/5 in WINESTATE Wine of the Year Awards Annual Edition 2018 Magazine.
Prawn with fennel & cannellini beans with Sauvignon Blanc Semillon 2010
I was invited as a surprise guest at a dinner party and requisite was for me to pair wines for two courses. This was one of the courses... Phew the pairing was a dream and the night’s hostess is now a keen supporter. Hot press, this is also featured with 4.5 stars/5 in WINESTATE Wine of the Year Awards Annual Edition 2018 Magazine.
Pumpkin soup with trimmings with Chardonnay 2009
I have been cooking pumpkin soup for Halloween since univ days in England… one of my annual pleasures. This year we paired with our museum Chardy 2009, yummo… I added some ham to the soup this year, an added dimension.

With Christmas around the corner we are also excited to ‘again pair’ the lovely lil spiced Shiraz with Turkey & trimmings… This beautiful drop has been served twice on Qantas Business class.
