Dear UMAMU family,
We are honoured to offer you this Margaret River Cabernet Merlot, inspired by Aunty May of ex Château Pichon Longueville Comtesse de Lalande in Bordeaux. Aunty May is why we planted the varieties to produce this blend in 1997. The blend in 2017 is 79% Cabernet Sauvignon & 21% Merlot. Click here to read more about our story with Aunty May.
The fermentation was in a combination of open and closed static tanks and was completed in the tank before being pressed off skins at dryness after 12-18 days of skin contact.
The wine was then matured for 10 months in about one third new French oak from the forests of Allier, Nevers and the centre of France.

"Deep crimson. Fresh blackcurrant, mulberry, dark plum fruits with vanilla notes. Well balanced and inky deep with lovely blackcurrant, mulberry, dark plum fruits, fine slinky/hint leafy textures and some vanilla notes. Cedar firm finish. 79% cabernet sauvignon, 21% merlot. " Drink till 2030.

"Margaret River sets the scene for this (and similar) blends, rolling out layers of blackcurrant-accented fruit, oak and tannins levers used to shape a full-bodied wine. Cassis, licorice and plum are all there to be had." Drink till 2032.

"Good depth of ruby colour with a trace of purple. The bouquet shows classic regional violet, blueberry, cassis aromas, definitively cabernet, while the palate is rich and medium to full-bodied, tautly textured with slightly firm but balanced tannins. It treads a nice line between fruit and savoury tastes and is drinking well now. Good value, too." Drink till 2029.
