| Appearance: A deep garnet purple hue.
Nose: Fresh with good intensity. Floral and berries with vanilla undertones.
Palate: Medium body and texture with fine tannins. Juicy with a background of oak and fruit with a medium long finish.
68% Cabernet Sauvignon, 22% Merlot, 10% Cabernet Franc
The moderate growing season culminating in the 2007 vintage provided near perfect growing and ripening conditions for the vines.
This wine represents a cuvee from seven different vineyard locations. These different locations have a range in altitude from 85-130m and a range of soil types which contribute a variety of flavours to the wines.
The fermentation was in a combination of open and closed static tanks and was completed in the tank before being pressed off skins at dryness after eight to ten days of skin contact. The wine was then matured for 10 months in about one third new French oak from the forests of Allier, Nevers and the Centre of France.
