2011 Shiraz ($35 per bottle)

"Good crimson-purple; the wine seems to be a little more oaky than the '10, but not to the point of being overshadowed by it; there is abundant plum and cherry fruit on the bouquet and generous, fleshy palate, where soft but persistent tannins also come into play. There is every reason to suppose the wine will quite quickly come into balance.." James Halliday Wine Companion 2014. Drink till 2026

"Vanilla, cinnamon and mixed berries mingle on the nose of the 2011 Shiraz. This medium to full-bodied red is mouthwateringly juicy, with smooth, silky tannins that give shape to the smooth combination of fruit, earth and oaky spice. Drink it over the next several years." Joe Czerwinski The Wine Advocate, Robert Parker.

This vintage is a blend from 1978 & 1997 parcels.

The berries were sent whole to a combination of open and closed static fermentation tanks. The ferments were pressed off just before dryness; hence, the wine completed its primary fermentation in the oak barrels, adding some spiciness. The wine was then matured for 10 months in about one third new barrels, mainly from the Allier and Vosges forests.
