Our first Rosé, 82% Cabernet Franc 18% Merlot, produced from a 0.4ha parcel of Cabernet Franc planted in 2001 with a top up of Merlot planted in 1997.
We approached it by having an open canopy all of the growing season so the fruit received gentle dappled light, which assisted with the growth of supple tannins and fragrant berry perfumes.
Fruit was cold crushed to press and cold settled before a 12°c ferment in barrel for 20 day's. Aged in barrel on lees for four months before bottling.
