We like to release wines when they are ready after they have had time to develop. The other thing we like or rather thrive on are vertical tastings. I love being able to taste the difference in the vintages.
John one of our UMAMU Team takes us on a journey with our Semillon Sauvignon Blanc 2005, Sauvignon Blanc Semillon 2010 and 2016. The ratio of the blend depends on the season and tasting.
The 2005 has 75% Semillon which has allowed the wine to age so beautifully. This was the first wine ready to be enjoyed when we started producing and we tried this with every single food type we tasted back in 2007. I found this to be such a versatile wine as it went with everything except for deep fried Shanghainese eel!
