Stylistically we release our wines after they have had time to develop in the bottle, a French approach for releasing wines when they are ‘ready’.
Featured in Gourmet Wine Magazine Top 100 New Releases Aug-Sep 2019 - "This winery is unusual for the maturity of its releases, especially rare in sauvignon blanc. Remarkably young light yellow hue; nutty, toasty bouquet reflecting oak fermentation. Nougat and marzipan nuances also. The palate is fresh and taut, again young for its age." Huon Hooke
Appearance: A clear vibrant straw green.
Nose: Intense with fresh sweet aromas.
Palate: Lovely balance, crisp with racy acidity. Fresh, delicious and mouthwatering. Medium intensity with good concentration and finish.
Vines planted in 1987. The canopy management was changed from double cane Smart Dyson to double cane Vertical Shoot Positioning from vintage 2011. Minimal intervention was needed with this Sauvignon Blanc block which is located at 130 metres above sea level, one of the highest blocks in the Margaret River region.
Fruit is harvested based on flavour and retention of natural acidity. This means harvesting at moderate ripeness which also assists with capturing fruit freshness. The wine is barrel fermented in mainly Allier oak, with a few Vosges barrels. Aged sur lie (on lees) for 10 months. The wine has a fortnightly battonage until around September when we see the appropriate textural development, after which battonage is monthly.
