UMAMU Rare Museum Wines:

At UMAMU Estate, we believe good wine takes time. And sometimes, the best thing we can do is wait.  

Not all wines are destined for immediate release. Some have the character, structure and potential to become something more — given the right conditions and, most importantly, patience. Our vineyard predisposes us with a high level of natural acidity and this is what allows us to age our wines well. So we track our wines and release when we believe they are in balance. And for selected vintages that have the horsepower we hold them back and allow them to continue to age gracefully in the bottle before we share them as part of our museum collection.

These wines aren’t about nostalgia. They’re about balance — and about enjoying wine when it’s at its most harmonious.


Why We Wait?
Our philosophy has always centred around balance and contentment. We believe wine reveals its best self with time. While many wines are released early and full of youthful energy, we choose patience. We cellar selected vintages until they’ve found their rhythm – when all parts of the wine are working together in harmony with no screaming parts.

It’s about releasing wines when they’re ready to shine.

What Happens as Wine Ages?

Think of wine like a conversation — fresh and vibrant at first, but more thoughtful and layered as it matures. Or like us as we mature and mellow.

As wine ages, the bright fruit flavours you might expect in young bottles (like citrus, berry or tropical notes) begin to evolve. Over time, those flavours become softer and more complex — turning into layers of honey, toast, nuts, spice, dried herbs, and earthy tones. The aromas shift too, developing savoury, floral or even nutty characteristics. The whole thing about us waiting, is for the wine to be at its most Balanced and Best.

Tannins, which give red wines structure, begin to soften and resolve more, giving the wine a smoother, rounder mouthfeel. Acidity, which brings energy and freshness, mellows slightly and becomes better integrated with the other elements.

In Chardonnay, ageing can bring out beautiful layers of lemon curd, almond, cashew and even hints of shortbread. What starts out crisp and citrusy becomes creamy, textured and quietly intense and powerful. These wines often develop a silken mouthfeel and a sense of richness that lingers.

In our Sauvignon Blanc–Semillon blends, bright acidity and herbaceous characters mellow into something more subtle and rounded. Tropical fruit notes shift into flavours of honeyed pear and dried herbs. Sometimes a waxy texture develops too, especially in wines that have seen some time in oak as ours do. These wines age into generous, food-friendly styles with real depth. 

So in short: wines that are very youthful, racy and fruit-driven become smoother, softer and more complex with an underlying backbone of freshness. All the pieces come together, and the result is a wine that feels calm, complete, and quietly expressive. Indeed wine is very personal which is what makes it so interesting and some people prefer wines so fresh that they haven't even been bottled yet!  And our palates do change with time. I implore you to try one that has had time to become a star and see how you find it.  

Why We Do It?
Some wines are good young — but others are better with time. And we believe that if a wine has the potential to evolve, it deserves that chance and we get to enjoy the evolution. That’s why we age selected wines from our vineyard, where plantings date back to 1978. These wines have the structure, natural acidity and balance to mature gracefully. We take much effort to allow our fruit to ripen slowly so that they gather as much character as possible. Our belief is 80% of a wine is made in the vineyard. 

Every wine we hold back becomes a kind of time capsule — a conversation between vintage, vineyard and winemaker, shaped by care and patience. We release these wines only when they’re ready to bring you that experience in full. It has been a journey for us to track our wines since our first vintage and understand why our wines keep getting better with time.


Our Museum Collection
Our collection of aged wines includes elegant, expressive bottles like the 2008 Chardonnay — rich, creamy and citrus-driven.  Our
Semillon Sauvignon Blanc 2005 is literally jumping out of the glass at 20 years old to say hello, give you a big hug and start an intense conversation with you. And the 2014 Cane Cut, with golden sweetness and layers of spice and tropical fruit lingers for what seems like happily forever after.

These wines are ready to enjoy now. No cellaring required, we have done the cellaring for you. Just pour, sip and savour.

They’re limited, of course. But not because they’re rare. Because they’ve been given the time they deserve.


How to Cellar Your Wines at Home
If you’re curious about ageing wine yourself, the good news is — you don’t need a custom-built cellar to get started. You just need the right conditions.

Here are a few simple tips:

  • Keep it cool and stable and consistent: Aim for a constant temperature around 12–15°C. Avoid places that heat up or cool down quickly (like near windows or kitchen ovens). The continuous change of temperature is not good for storage.

  • Minimise light: Light, especially sunlight, can prematurely age a wine. Store your bottles somewhere dark, or in closed boxes.

  • Lay bottles on their side: This keeps the cork moist and sealed, preventing oxygen from sneaking in.

  • Avoid vibration: A wine likes to rest. Try not to store bottles in places where there’s frequent movement (e.g. on top of a fridge).

  • Know what to age: Not all wines improve with time. Look for wines with good structure, acidity and balance. Red wines like Cabernet Sauvignon and white wines like Chardonnay with oak and body tend to do well.

Start with a few bottles, note your tasting impressions over time, and enjoy the process. Cellaring wine is about patience and curiosity — and the reward is deeply personal.  I love trying the same vintage over a space of time to see how it develops.
