Good acid profile with a percentage given treatment and time in oak, which offers structure, longevity and potential. If you drink this blind you would not guess its age; instead you can appreciate a wine full of character. Therein lies the beauty of a well-made wine and the journey of our palate development. Explore & Expose your palate, it is always worth it. The best part is to watch a wine develop and believe me this wine isn’t over the hill yet, it has another few years to go. That’s another plus point of a well-made wine: you can keep the conversation going. 

The wine is incredibly versatile and goes well with various cuisines from sashimi, to mild curries to seared seafood.

Dear UMAMU family,

Experience our vineyard's finest with our 3 Pack of Estate Sauvignon Blanc Semillon/ Semillon Sauvignon Blanc - a harmonious fusion of flavours that will transport your senses to the heart of our winemaking legacy.  The wine is incredibly versatile and goes well with various cuisines from sashimi, to mild curries to seared seafood. 

We submitted these three vintages recently and received two gold and one silver medal and we have put into a 3 pack for you to savour. 

Our 2005 vintage was specifically pulled out of museum stock. It is rocking at the moment, full of flavour and intensity.  It is drinking beautifully on its own and pairing well with a variety of cuisines, and has a balance of 65% Semillon and 35% Sauvignon Blanc.

With our 2010 and 2019 vintages, our Sauvignon Blanc parcel was planted in 1987, while our Semillon parcel was planted in 1997. Both vine canopies are well managed in order to improve light interception and hence development of flavours during ripening, while reducing any microclimate humidity. 

The Sauvignon Blanc parcel is located at 130 metres above sea level – one of the highest in the Margaret River wine region. A portion of this homegrown Australian SBS wine was fermented in French oak barrels to provide some background complexities and textures.
